Fried Rice with potatoes (non-vegetarian)
This is a recipe I often use to make a quick dinner for my kids.
My elder one, a 5 year old son, is quite finicky about his food. This preparation is nutritious and very tasty, and never fails to satisfy him!
The recipe is as follows -
Preparation time: - 10 minutes
Cooking time - 5 minutes
Ingredients:
2 cups pre-cooked rice / left-over rice
1 boiled potato - cut into small squares
1 cup chicken stock / Maggi chicken cube seasoning / Vegetable stock
1 egg
1 tsp onion- ginger paste
1 tsp Vinegar Oil
Salt to taste
Method for preparation:-

Method for preparation:-
- In a
hot frying pan, pour oil. After the oil heats, add onion-ginger paste. Then
fry this paste.
- Now,
in a bowl, beat 1 egg and add it in the pan. Make a scramble.
- Add
the potatoes, vinegar and the pre-cooked rice.
- For
flavour, add the chicken stock and salt to taste.
- Keep
frying the entire thing and let the stock dry.
- Serve
the hot fried rice with tomato sauce.
P.S.
You can add some boiled vegetables like carrots, beans, cabbage, if it suits
your child's pallet.
